White Trash, Beef Stroganoff

I like to back pack. One of my big fundamental problems is with backpacking food. It is often low in protein, and high in price. We have other options.

My father introduced me to a canned roast beef product from Costco. It is the Kirkland Signature brand of “Roast Beef in beef broth”. It is premium top, and bottom round. It is fully cooked “pot roast”. It is 97% lean, and comes in a 12oz can. For what it is, it is pretty tasty. 

Preparation:

I have some tiny bottles that I got at REI. They are great for carrying things like butter, or oil into the forest.

Meal for 2, or one really hungry fat kid:

(After a short 3.25 mile hike with 2420 ft of elevation gain, and a 50# pack on my back. I womped down this entire recipe, no problem.)

(1) box of Annie’s Shells & White Cheddar

(1) 12oz can of Kirkland Signature roast beer in broth (source from Costco, or amazon.com)

Prepare at home:

3/4 tsp Kosher Salt

1 tsp Fresh ground black pepper

1 tsp Ground chipotle (use smoked paprika if you don’t like spice)

1 tsp Onion powder

0.5 tsp Garlic powder

1 tbsp Nestle Nido Whole Milk Poweder

Measure these out, and put them in a zip lock baggy.

~3 tbsp Water

(optional, but recommended) 1-3 tsp ghee, or cooking oil (I prefer macadamia nut oil). Put this is your tiny bottle from REI.

 

At meal time:

Boil the pasta util it is al dente. (8-9 min.) Drain, and set aside. Open the can of beef, and use the lid to press out the water. Add it to a pot, over medium heat. Break up the chunks, and stir in the garlic powder, onion powder, chipotle powder, salt, and pepper.  Next, add your water, the pouch of cheese sauce mix, and the oil, Once this is hot, and has formed a sauce. Add the pasta, and stir to combine. It is now ready to serve. 

 

Nutrition:

This meal has 85 grams of protein, and 1355 calories (it is 1000 calories if you skip the oil, or butter.) If you are feeding two people that is 43 grams of protein, and 677 calories for each of you. If you are hiking with a pack. You are going to need these calories, and protein. 

Pack out your trash! I put the pasta in a zip lock bag, and leave the box at home.
